Since my and Heather's mail will be on this box, backing up the
email will be easier, since they're both under /data/mail.

Yes, it's overkill, but if I ever have to do this for someone
else, like a non-profit, I'll know it can be done.

Symlinking worked like a charm:
$ dir Maildir
lrwxrwxrwx 1 me me 21 Nov 4 01:55 Maildir -> /data/mail/me/Maildir/

I expect performance to be better, also..
