We also use IMAP. Specifically:
fetchmail --> postfix --> maildrop -> $USER/Maildir <-- courier-imap

Sorry, I misread.

Have you tried logging in as a specific user and running:
$ fetchmail -v
while in another window "# tail -f /var/log/mail.log"?
